ingredients

  • 3/4 cup light brown sugar
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 cup unsalted butter
  • 8 ounces semi-sweet chocolate, chopped
  • 3/4 cup all-purpose flour
  • 6 tablespoons Dutch-processed cocoa powder
  • 1 teaspoon kosher salt

Method

  • Step 1

    Preheat oven to 350 F (180 C) and line the bottom and sides of an 8"x8" pan with parchment paper.

  • Step 2

    In the bowl of a stand mixer with the whisk attachment or a large bowl with a hand mixer, beat the eggs and sugar on high until light and thick.

  • Step 3

    In a medium bowl, add the butter and chocolate and microwave in 1-minute increments until melted.

  • Step 4

    In a small bowl combine the flour, cocoa powder, and salt, set aside.

  • Step 5

    Add the chocolate and butter mixture to the eggs and beat on high until combined.

  • Step 6

    Add in the dry ingredients and fold until combined.

  • Step 7

    Transfer the batter to the prepared pan and bake for 30-35 minutes. Halfway through baking, remove them from the oven and bang them on a countertop that has a tea towel over it. This helps them remain a bit flatter in the end.

  • Step 8

    Remove from the oven and cool for about 30 minutes to an hour before serving.
