ingredients

  • 4 cups all-purpose flour
  • 3/4 cup grated Parmesan cheese
  • 4 teaspoons baking powder
  • 2 1/2 teaspoons freshly ground black pepper
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon baking soda
  • 3/4 pound unsalted butter, frozen
  • 1 3/4 cups buttermilk

Method

  • Step 1

    Preheat oven to 450°F. Combine flour, cheese, baking powder, pepper, salt, and baking soda in a large bowl.

  • Step 2

    Grate butter using the large holes of a box grater. Stir into the flour mixture. Add buttermilk stirring just until a soft dough begins to form.

  • Step 3

    Working on a lightly floured surface, knead the dough 3 times until it comes together. Pat or roll the dough into a 1 to 1 1/4-inch thick round.

  • Step 4

    Cut dough, using a floured 21/2-inch biscuit cutter into rounds, re-rolling scrapes once. Arrange biscuits on a baking sheet. Place in the freezer for 15 minutes.

  • Step 5

    Remove biscuits from freezer. Bake at 450°F until golden brown, about 15 to 18 minutes. Serve warm.
