Fried Breakfast Eggs with Roasted Potatoes

  • 1 cup baby potatoes, halved
  • 1 tablespoon olive oil, plus more as needed
  • Kosher salt, to taste
  • Crushed red pepper flakes, to taste
  • 2 eggs
  • Handful baby arugula
  • 1/2 avocado, sliced


  • Step 1

    Preheat oven to 400ºF. Toss the potatoes with a drizzle of oil and season with salt and red pepper flakes to taste. Spread out on a parchment-lined baking sheet and roast for 35-40 minutes, until crispy.

  • Step 2

    Heat 1 tablespoon oil in a skillet. Fry eggs for 3-4 minutes, until whites are set and yolk is runny.

  • Step 3

    Serve roasted potatoes, fried eggs, arugula and avocado. Adjust seasoning to taste.
