Date Caramel Pancakes With Banana, Pecans And Coconut

"Today started with some caramel vegan pancakes here. Topped with the usual (suspects) : banana coins, pecan nuts, coconut shreds and maple syrup ."

Serves 2 (8-10 pancakes)

Ingredients

1/2 cup chickpea flour

1/2 cup brown rice flour

 2 tbsp raw mesquite powder

1/2 tsp baking powder

1/2 tsp vanilla powder

pinch of sea salt

1/2 ripe banana

1 cup almond milk

2 medjool dates, pitted

Directions 

Grease a nonstick pan and heat it over medium heat (you want the pan to be completely pre-heated).

Combine all ingredients in a food processor and process until smooth (add a little more milk if too thick).

Spoon one pancake worth of mixture into the pan. Flip when bubbles start to form.

Transfer to a plate and repeat with remaining batter.

Top with fruits, nuts and syrup. Enjoy!
