ingredients

  • 1 loaf Challah bread
  • 1 cup milk
  • 1 cup heavy cream
  • 8 eggs
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 3/4 cup brown sugar
  • Powdered sugar, optional
  • Maple syrup, optional

For the topping:

  • 1 cup pecans, halved
  • 1/2 cup brown sugar
  • 2 or 3 bananas, sliced
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon rum extract

Method

  • Step 1

    Preheat oven 350°F.

  • Step 2

    Slice Challah bread into thick slices. Set aside.

  • Step 3

    In a large bowl combine eggs, milk, cream, vanilla, cinnamon, nutmeg, and brown sugar. Whisk and set aside.

  • Step 4

    Dip each slice of bread lightly in the egg mixture and shingle the bread in the casserole dish. Pour the remaining egg mixture on top of the bread.

  • Step 5

    In a skillet on medium heat toast pecans for about 5 minutes. Add butter to the skillet and let melt. Sprinkle in brown sugar, cinnamon, vanilla, rum extract and mix until combined. Once combined and has the consistency of syrup add in bananas and coat them evenly.

  • Step 6

    Top your challah bread with banana topping and bake in the oven for 45-50 minutes, until custard is set and bread is golden brown.

  • Step 7

    Sprinkle with powdered sugar and/or maple syrup.
