Aged Balsamic Blistered Tomato Toast

ingredients

  • 400 g cherry tomatoes
  • 1 tablepsoon olive oil
  • 2 tablepsoon aged balsamic vinegar
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 4 slices sourdough bread
  • 1 tablepsoon butter

Method

  • Step 1

    In a medium none stick pan, cook the cherry tomatoes on high heat for 2-3 minutes or until starting to pop and blister.

  • Step 2

    Move off the heat and add the oil and balsamic. Place back on the heat after spitting and cook until the balsamic reduces. Add the salt, paprika and 3/4 of the basil cook until tomatoes break down without cutting.

  • Step 3

    Meanwhile, butter the bread and crisp in a sandwich press or in a separate pan.

  • Step 4

    To serve, top the crisp sourdough with the tomatoes making sure there is a lot of sauce. Top with the renaming basil and sea salt.
