Easy Garlic Prawn Pasta

ingredients

  • 300 grams raw, peeled and deveined prawns/shrimp
  • 250 grams dried spaghetti
  • 2 tbsp olive oil
  • 1/2 cup fresh parsley, roughly shopped
  • 1 tbsp fresh lemon juice
  • salt and pepper

Prawn/shrimp marinade

  • 1 tbsp olive oil
  • 2 cloves minced garlic
  • salt and pepper

Method

  • Step 1

    Cook pasta according to packet instructions. Ensure to season the water with salt. About 1 tbsp.

  • Step 2

    Whilst pasta is cooking, mix prawn/shrimp marinade with prawns and set aside.

  • Step 3

    Once pasta is cooked to al dente, drain and reserve 1/2 cup of pasta cooking water.

  • Step 4

    Saute marinated prawns with 2 tbsp of olive oil on a large, non-stick pan on medium/high heat. Cook for 1 minute.

  • Step 5

    Squeeze in lemon juice, stir for 10 seconds then mix in cooked pasta and reserved pasta cooking water. Stir thoroughly for 1 minute.

  • Step 6

    By now, the pasta cooking water should have been mostly absorbed.

  • Step 7

    Turn heat off, mix in parsley and season with salt and pepper to taste. I like to go heavy on the pepper.

  • Step 8

    Serve immediately, with a wedge of lemon.
