Cook time 10 minutes
Yield: Serves or Makes 4-5
Cut up all the peppers into medium bite size pieces.
Thinly slice the onions.
Cut tomato into slices.
Combine vegetables into a large bowl.
In a small bowl add the Sicilian Lemon Balsamic Vinegar, apple cider vinegar, dijon mustard and cilantro. Drizzle in the extra virgin olive oil while continuing to whisk. Add salt and pepper to taste.
Add the dressing to the vegetables and stir. Serve as a slice dish or with grilled chicken.
