- 4 large russet potatoes
- 4 to 6 cups avocado oil (or another high-heat neutral oil)
- Fine sea salt, to taste
- Flaky sea salt, for garnish
- Fresh parsley (optional), for garnish
Method
Step 1
Slice the russet potatoes into ¼-inch slices, then stack them and cut into ¼-inch matchsticks for classic shoestring fries.
Step 2
Transfer the cut potatoes to an ice bath and let them soak for 10 minutes. This step removes excess starch and helps achieve crispy fries.
Step 3
Remove the potatoes from the water and pat them completely dry using a clean dish towel or paper towels.
Step 4
In a heavy-bottomed deep skillet or Dutch oven, heat 3 inches of oil to 375°F over medium heat. If you don’t have a thermometer, test the oil by adding one fry—if it bubbles immediately, the oil is ready.
Step 5
Working in batches to avoid overcrowding, carefully add the potatoes to the hot oil. Fry until golden brown and crispy, about 5–8 minutes. Use a slotted spoon or tongs to remove the fries and transfer them to a baking sheet lined with a cooling rack or a paper towel-lined plate.
Step 6
Sprinkle fine sea salt over the hot fries while they're still fresh from the oil to ensure it adheres.
Step 7
Once cooled slightly, garnish with flaky sea salt and fresh parsley if desired. Serve warm and enjoy!
