ingredients
- 3/4 cup orzo
- 1 cup vegetable broth
- 1/4 cup coconut milk
- 1 shallot, minced
- 1 tablespoon live oil
- Salt & pepper, to taste
- 1 bunch asparagus
- 1/2 cup peas
- 2 eggs
Method
Step 1
In an pan start by heating the oil on medium heat and stir in the minced shallot. Then add the peeled asparagus and cooked them for about 5 minutes.
Step 2
Add orzo pasta and green peas to the pan and pour the boiling veggie broth on it. Cover and let it cook for about 10 minutes.
Step 3
While the orzo risotto is cooking, make your poached egg : bring a large pot of water to a boil, add a tablespoon of vinegar and create a whole with your spoon. Add the eggs, one by one into the water and let them cook for 3 minutes. Remove them carefully from the water and set aside.
Step 4
After the 10 minutes, add coconut milk to the risotto, salt and pepper to taste. Mix everything and serve it with your poached egg on top and some chives.
