For the Apple Cake

ingredients

  • 1 cup spelt flour
  • 1/2 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1/2 cup applesauce
  • 1/4 cup plus 1 tablespoon maple syrup, divided
  • 1/4 cup almond milk
  • 2 tablespoons almond butter
  • 1 teaspoon apple cider vinegar
  • 2 apples, sliced

For the Cinnamon Coconut Caramel

ingredients

  • 1/4 cup full fat coconut milk
  • 1 tablespoon cinnamon
  • 1 tablespoon coconut sugar

Method

  • Step 1

    Preheat the oven at 350° F. Line a loaf pan with parchment paper.

  • Step 2

    To make the apple cake: Mix flours, cinnamon, baking soda, baking powder and salt together in a large bowl. Whisk the applesauce, 1/4 cup maple syrup, almond milk, almond butter and apple cider vinegar in a medium bowl.

  • Step 3

    Toss apple slices and 1 tablespoon maple syrup in a small bowl. Pour the wet ingredients into the dry mixture and stir to combine. Mix in the apples until just incorporated.

  • Step 4

    Pour batter into prepared pan. Bake for 40-45 minutes. Remove from oven and let cool completely before cutting.

  • Step 5

    To make the cinnamon coconut caramel: Pour all ingredients into a small pot and bring to a boil while stirring. Once boiling, turn off heat and continue mixing until it thickens. Drizzle over cooled apple cake.
