For the Cream
ingredients
- 3 egg yolks
- 2 cups mascarpone cheese, room temperature
- 2 cups heavy cream
- 1/2 cup granulated sugar, divided
- 2 tablespoons espresso
For the Assembly
ingredients
- 24 lady fingers cookies
- 2 cups espresso
- 1/4 cup amaretto
- 1/4 cup dark cocoa powder
Method
Step 1
Using an electric mixer in a medium bowl, whip together egg yolks and half of the sugar until very pale yellow and about tripled in volume. Transfer mixture to a large bowl.
Step 2
In the medium bowl, whip cream and remaining 1/4 cup sugar until it creates soft-medium peaks. Add mascarpone and espresso and continue to whip until you have a soft, spreadable mixture with medium peaks. Gently fold the mascarpone mixture into the sweetened egg yolks until combined.
Step 3
Add the hot coffee and amaretto to a shallow bowl and dip about 1/4 of the lady fingers in the coffee, letting soak for about 1-2 seconds. Create a layer of ladyfingers in the bottom of the baking dish, then top with half of the mascarpone mixture. Repeat with remaining ladyfingers and mascarpone. Top the final layer with an even layer of remaining whipped cream. Cover tightly with plastic wrap, then let sit in the fridge for at least 4 hours, or overnight.
Step 4
When ready to serve, dust the top with cocoa powder
