Superfood Rocky Road Bars

"Preppin’ some superfood studded RAW ROCKY ROAD for the week ahead. Super nutritious and oh so delicious! With a base of cacao, coconut oil and dates, I chucked in some in hemp protein powder, almonds, macadamias, pistachios, pumpkin seeds, goji berries, cherries, toasted muesli, and coconut chips, yep cupboard clear out. Tastes like heaven!"

Ingredients:

3/4 cup coconut oil

1/2 cup cacao powder

1 cup dates, soaked

2 tbsp hemp protein powder

1.5 cups mixed nuts

1/2 cup pumpkin seeds

1 cup toasted muesli or granola

1/4 cup goji berries

1/4 cup dried cherries

1/4 cup coconut chips

Sea salt

Method:

Melt coconut oil gently and add to blender with cacao powder, hemp powder and dates. Blend until smooth, it will form a thick, sticky ball.

Pour into a bowl and stir through remaining ingredients. Push down the mix firmly into a lined small baking tray and pop in the fridge to set. Chop into slices or small squares.

Keeps well in the fridge for at least a week, up to a month in the freezer.
