Chocolate Truffles Four Ways
"Stuck for last minute gift ideas? How about whipping up a batch of these easy peasy chocolate truffles. You just need four ingredients and a couple of hours before you can make your own gorgeously smooth and rich chocolates. At a time when everybody seems to be buying things they can't afford for people who don't need them, in my eyes nothing says you care more than a homemade gift. From left to right - cacao powder, pink coconut sprinkles, hazelnut and coconut sugar/cinnamon. Which one would you pick?"

Vegan Chocolate truffles (makes 20-24 truffles)

 

Ingredients

2.5 cups dairy free chocolate, chopped

14 tbsp coconut mylk

1 tsp vanilla extract

Pinch of pink salt

Directions:

Heat coconut mylk gently in a pan until simmering. Put chopped chocolate in a medium sized bowl. Pour over the chocolate and cover with a lid or towel, leave for 5 minutes. Stir through vanilla and salt and pop in the fridge for 2-3 hours, until firm all the way through. Check the middle with a knife- if it comes out clean it's ready. Now scoop into tbsp size balls and coat with your fave toppings.
