Vegan Chocolate truffles (makes 20-24 truffles)
Ingredients
2.5 cups dairy free chocolate, chopped
14 tbsp coconut mylk
1 tsp vanilla extract
Pinch of pink salt
Directions:
Heat coconut mylk gently in a pan until simmering. Put chopped chocolate in a medium sized bowl. Pour over the chocolate and cover with a lid or towel, leave for 5 minutes. Stir through vanilla and salt and pop in the fridge for 2-3 hours, until firm all the way through. Check the middle with a knife- if it comes out clean it's ready. Now scoop into tbsp size balls and coat with your fave toppings.
