Stuffed Delicata Squash
When you love the @darling girls you happily hand over the ? to your ?and in my case that's a ? dish you won't ever get sick of ??(link to @darling in profile) Full of vitamin A and C, a half-ed small delicata squash cooks up quickly and is the perfect serving shell for stuffing. Full of phosphorus, magnesium, potassium, iron, and B Vitamins, tahini is an earthy fat to add complexity and nutrition to your next meal. Elevated with flavor, immune boosting and antioxidant rich cumin, garlic and smoked paprika add complexity and nutrition in every bite.
Chia Cranberry Sauce With Orange Zest & Honey


1 bag of 8oz fresh cranberries
Juice of 1/2 orange and 2 tbsp of zest
1 cup of water
3 tbsp raw honey
1/3 cup chia seeds

1. Add all above ingredients in a fry pan and stir on medium heat until honey dissolves and cranberries pop and are soft, about 6 minutes

2. Turn off burner and add an additional 1/3 cup of water and chia seeds and stir.

3. Pour into serving container and refrigerate for 4 hours. Great thanksgiving side to make the day before!

I am calling these “spiced butternut croutons”.....preheat oven 375 and mix 1 bag cubed butternut squash, 1 tbsp Cinnamon, 1/2 tsp Cayenne, 1/2 tsp nutmeg, 1 tsp salt, 3 tbsp melted ghee or avocado oil on a baked sheet. Roast for 20 minutes flipping 1/2 way through. Oh ??.....and yes this is how I eat #vegan when I feel like it. Loads of fat...dressing and ? Seeds for protein and a big bowl of fiber and greens to stay full. ? @vanessatierneyphoto
