Golden Beet and Potato Soup

"Sheet Pan... Soup?! Roast your favourite veggies then scoop them into a pot with some broth & puree with an immersion hand blender, or throw it all into blender with broth and you're done! Although I still love a good stove-top soup, I think I'll pass on the soup steam facial every once in a while in favour of this method!"
