"I have been loving soccas (aka chickpea pancakes/flatbread) recently!!๐ This one has grated radish, crispy butternut "bacon", avocado, pomegranate + dill all drizzled with a smoked paprika tahini sauce! To make the butternut bacon, use a peeler to make slices of squash and fry in ghee/avo oil - SO GOOD.
Soccas are also so easy to make! Buy chickpeas in the bulk section and use blender to grind them into a flour (it's super loud just fyi!). I couldn't find the pre-made flour, and it's cheaper to make it yourself anyway!"

ingredients
- 1 cup water
- 1 cup chickpea flour
- 2 tablespoons sesame oil
- salt and pepper to taste
Method
Step 1
Preheat oven at 450 degree F.
Step 2
Mix flour, water salt and pepper. Set aside and let the mixture sit for about 30 minutes.
Step 3
Over medium heat, heat up cast iron pan or oven-proof frying pan, add some oil, and once hot pour chickpea batter into a thin layer. for about 10 minutes or until bubbly and browned on the top!
