Tahini Cookie Bars

"TAHINI COOKIE BARS 🙌🏻 You know I got that chocolate ratio on lock when the the inside of my cookie bar looks like a brownie 😍. . These paleo, dairy free, gluten free, and refined sugar free treats are so dang easy to make and seriously a crowd pleaser. Definitely under-bake them, since we all know ooey gooey chocolate chip cookies really can’t be beat 🍪 . . INGREDIENTS 2 @vitalfarms eggs 1/2 cup @soomfoods tahini 3/4 cup coconut sugar 2 tsp vanilla extract 1 cup @thrivemarket almond flour 1/3 cup @bobsredmill coconut flour 1 scoop @ancientnutrition collagen peptides - optional 1 tbs coconut oil 1/2 teaspoon baking soda Pinch of salt 3/4 cup chopped dark chocolate (I used @evolvedchocolate signature dark chocolate bars) Fancy Maldon Salt, to sprinkle on top. . . Directions Mix together wet ingredients until well incorporated. Then add dry ingredients. It will be thick like cookie dough. Fold in dark chocolate. Spread in lined 8x8 pan. Add a few more chocolate chunks to the top. Bake at 350 for 18-22 mins until just golden (you want them GOOEY). Top with flaked salt. Let cool completely, then DEVOUR (pro tip: it’s amazing with vanilla ice cream)"

These cookie bars combine all of our loves into one! Sweet and nutty tahini combines with a chewy cookie recipe to bring the best of both worlds together.

  • 2 eggs
  • 1/2 cup tahini
  • 1 tablespoon coconut oil, melted
  • 2 teaspoons vanilla extract
  • 3/4 cup coconut sugar
  • 1 cup almond flour
  • 1/2 teaspoon baking soda
  • pinch of Kosher salt
  • 3/4 cup dark chocolate, chopped
  • Flakey salt, for garnish


  • Step 1

    Preheat the oven to 350°F. Line an 8x8 inch pan with parchment paper.

  • Step 2

    In a medium mixing bowl, add sugar, flour, baking soda and salt and stir to combine.

  • Step 3

    In a large mixing bowl, combine the eggs, tahini, coconut oil and vanilla extract together. Then, fold in the dry ingredients until well incorporated. The dough will be very thick. Fold in the dark chocolate.

  • Step 4

    Spread the dough in the pre-lined pan and bake until the top is just golden, 18-22 minutes. Top with flakey salt and let cool completely. Then enjoy!
