- 3 cups arugula
- 1/2 cucumber, thinly sliced
- 2 7-minute eggs, peeled and quartered
- 2 ounces Lox
- 1/2 avocado, diced
- 2 tablespoons capers
- 1/2 lemon, juiced, to taste
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
