ingredients

  • 3 cups arugula
  • 1/2 cucumber, thinly sliced
  • 2 7-minute eggs, peeled and quartered
  • 2 ounces Lox
  • 1/2 avocado, diced
  • 2 tablespoons capers
  • 1/2 lemon, juiced, to taste
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Method

  • Step 1

    Assemble all ingredients into a large bowl. Toss to combine and season with lemon juice, olive oil, salt and pepper to taste.
