Ingredient Notes

  • Pistachio Butter

    Pistachio butter is simply ground pistachios. It is just like any other nut butter and can be used in baking or just for enjoying on toast.

  • Kataifi

    Kataifi is shredded filo dough which is used to make the Middle Eastern Dessert, knafeh. When toasted, the flavor pairs very nicely with the pistachio butter and tahini for the filling.

  • 6 tabelspoons unsalted butter, softened
  • 1/4 cup pistachio butter
  • 1 cup white granulated sugar
  • 2 eggs
  • 1 tablespoon sour cream or plain greek yogurt
  • 1 3/4 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup plus 6 tablespoons all purpose flour
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/3 cup semisweet chocolate chips

Topping and Assembly

  • 1/2 package kataifi, room temperature
  • 1/3 cup pistachio butter
  • 2 tbsp tahini
  • 1 tbsp honey, use if needed for filling and extra for assembly
  • 1/2 bar milk chocolate
  • 1/2 bar dark chocolate
  • 2 tsp coconut oil

Cake

Method

  • Step 1

    Preheat the oven to 350 degrees Fahrenheit. Grease a standard loaf pan and line it with parchment paper.

  • Step 2

    In the bowl of a stand mixer or a large bowl with a hand mixer, cream the butter, pistachio butter, and sugar.

  • Step 3

    Add eggs, one at a time, mixing after each addition.

  • Step 4

    Mix in sour cream.

  • Step 5

    In a medium bowl, whisk together baking powder, salt, and flour.

  • Step 6

    In a liquid measuring jug or small bowl, whisk together the milk and vanilla extract.

  • Step 7

    Add 1/3 of the dry mixture to the butter mixture and mix to combine. Add 1/2 the milk mixture and mix to combine. Repeat until both the dry and milk mixtures are all incorporated (making sure to finish on the dry mixture).

  • Step 8

    Fold in the chocolate chips.

  • Step 9

    Transfer the batter to the prepared pan.

  • Step 10

    Bake the loaf cake for 35-40 minutes or until a toothpick inserted comes out with a few moist crumbs.

Topping and Assembly

  • Step 1

    Preheat your oven to 375 degrees Fahrenheit.

  • Step 2

    Spread the kataifi out onto a parchment lined baking tray. Drizzle with oil. Toss the kataifi to coat evenly with oil.

  • Step 3

    Bake for 10-15 minutes or until golden brown.

  • Step 4

    Add toasted kataifi to a medium bowl with the pistachio butter and tahini. Add honey as needed to bring the mixture together.

  • Step 5

    Add milk chocolate to one bowl and dark chocolate to another. Add 1 tsp of coconut oil to each bowl.

  • Step 6

    Melt in 30 second increments or until completely smooth.

  • Step 7

    Release the cooled cake from the pan by releasing the sides with an offset spatula.

  • Step 8

    Brush the top of the loaf with honey and then add the pistachio kataifi mixture on top.

    Drizzle the melted milk and dark chocolate over top.

  • Step 10

    Slice and enjoy!
