A galette is the perfect dessert to bake for any summer gathering. It is a great way to use your favorite summer fruit, and it comes together with an easy homemade crust.

Crust

  • 1 1/2 cups all purpose flour
  • 2 tbsp white sugar
  • 3/4 tsp salt
  • 1/4 tsp cinnamon
  • 10 tbsp unsalted butter, cold, cut into cubes
  • 5 tbsp ice water

Filling

  • 1 1/2 pounds peaches
  • 1 pound apricots
  • 3 tbsp white sugar
  • 2 tbsp brown sugar
  • 1 lemon, juiced
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1 pinch salt
  • 1 egg white, for brushing the crust
  • 2 tbsp turbinado sugar, for sprinkling on top of the crust
  • 1 tbsp cornstarch, plus 2 tbsp water, to make a slurry

Method

For the Crust:

  • Step 1

    In the bowl of a large food processor, add the flour, sugar, salt, and cinnamon. Pulse a few times to combine.

  • Step 2

    Add the cold butter, and pulse until a coarse mixture forms.

  • Step 3

    Add ice water, one tbsp at a time. Do this as the processor is running, until a dough just forms. Wrap the dough in saran wrap and chill in the freezer for 30 minutes.

Making the Filling and Assembly:

  • Step 1

    Slice all of the fruit thinly, and transfer into a large sauce-pot. Add the white and brown sugar, lemon juice, vanilla, cinnamon, and salt.

  • Step 2

    Sauté on medium heat to remove some of the liquid from the fruit. Taste the filling for sweetness, add more sugar if you'd like it sweeter, or an extra squeeze of lemon for added tang. After about 5 minutes, add the cornstarch slurry, and continue to cook until the liquid thickens.

  • Step 3

    Take the filling off the heat.

  • Step 4

    When the dough is chilled, place it onto a floured surface and roll it into a large disc, (about a 15" round). Transfer the rolled out crust onto a sheet tray lined with parchment paper.

  • Step 5

    Scoop the filling into the middle of the crust and spread out slightly, leaving about 4 inches of crust on the perimeter to fold over.

  • Step 6

    Fold the sides of the crust over to close in the filling and form the galette.

  • Step 7

    Using a pastry brush, brush the crust with egg white and sprinkle with turbinado sugar.

  • Step 8

    Bake the galette at 350 degrees Fahrenheit for about 30-40 minutes, or until the crust is golden brown and the filling is bubbling.

  • Step 9

    When ready to serve, top with whipped cream or ice cream and enjoy!
