Classic Italian Ricotta Cheesecake

  • 3 pounds fresh ricotta cheese
  • 8 large eggs
  • 1/2 pound sugar
  • zest of 2 oranges
  • Toppings of choice, such as: whipped cream, orange peels, raspberries


  • Step 1

    In a large bowl, mix together all the ingredients very well.

  • Step 2

    Coat the bottom and sides of a 9″ springform pan with butter. Pour the mix in the springform pan and tap on counter.

  • Step 3

    Bake for 30 minutes at 425F then reduce temperature to 380F and continue baking for an additional 40 minutes. The top should be a dark yellow/golden brown color.

  • Step 4

    Let cool, and decorate with whipped cream dollops, raspberries, and orange peels as I did here or with any fresh fruit you have. Serve and enjoy!
