You need to save this recipe for your next holiday party. These mini phyllo Brie bites made with Driscoll's raspberries are easy to assemble and have a lovely contrast of textures and flavors. Petite, pretty appetizers taste better. It's a fact! Creamy, salty and sweet, all in one bite. Try for yourself and see but don't say I didn't warn you. They're irresistible!
Note: this appetizer is a great make ahead recipe. Simply prep the phyllo shells with Brie and jam, cover with plastic wrap and store in the refrigerator for up to 3 hours. Bake just before serving. To preserve crispness, transfer baked phyllo shells onto a wire rack until ready to serve. This airflow helps keep the shells crispy and prevent any soggy bottoms from forming.

- 1 (8 ounce) container Driscoll's raspberries
- 30 mini phyllo shells, pre-made
- 16 ounces soft-ripened brie, cut into ½ inch cubes
- 1/2 cup mixed berry jam
- 3 sprigs fresh thyme, for garnish
- Hot honey, for drizzling
Method
Step 1
Preheat oven to 325°F.
Step 2
Arrange phyllo cups on a baking tray. Place a spoonful of jam inside the phyllo shell, along with a small cube of Brie.
Step 3
Bake 6-8 minutes, until the Brie is melted, and the shells are light brown in color. Top each shell with a fresh raspberry and thyme.
Step 4
Drizzle with hot honey before serving.
