"I posted this last week and then deleted it because I wasn’t sure what Instagram was doing outside of just hating me. And then I forgot to repost it until now, oops!

2 rounds pie crust dough (homemade or store-bought)
5 apples (I use Granny Smith & Braeburn)
Fresh lemon juice
1/4 cup brown sugar
1/3 cup all-purpose flour
1 tablespoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon kosher salt
1/4 teaspoon cardamom
1/4 teaspoon allspice
1/4 teaspoon cloves
1 tablespoon vanilla bean paste
1/3 cup brown butter maple salted caramel
1 egg
Turbinado sugar

Preheat oven to 375°. Grease 9-inch pie plate with butter and line with one pie crust round, pressing into the pan until flush. Keep in the fridge while prepping apples.
Peel, core, and slice thin each apple and place in a very large bowl. Sprinkle with lemon juice as needed to keep the apples from turning brown.
In a small bowl combine the brown sugar, flour, cinnamon, nutmeg, salt, cardamom, allspice, and cloves. Add to the big bowl with the apples, then add the vanilla bean paste. Gently toss by hand until all apples are evenly coated.
Layer apples in pie plate as evenly as possible, breaking a few slices as needed to fill gaps, then top with dollops of the caramel. Place remaining pie dough on top, cut to form a lattice, or any other fun way so long as there are slots to release steam, and press edges together, trimming any excess dough as needed.
Whisk the egg and brush dough lightly, then sprinkle with turninado sugar. Bake for 1 hour, then remove from the oven and let cook for a minimum of 1 hour before slicing.
