Ingredients:
 
Makes 15 pancakes
 
2/3 cup rice flour 
2/3 cup chestnut flour (or buckwheat flour if you prefer)
1 1/2 tbsp potato starch
1 tbsp baking powder
Pinch of salt
1/8 cup raw sugar
1 flax egg
1 cup almond milk
2 tbsp coconut oil
For Berry Sauce:
1 cup mixed frozen berries: strawberries, blueberries, blackberries
1 tbsp maple syrup
 
Directions:
In a large bowl, place the flour blend, baking powder, salt and sugar, and whisk to combine well. 
Create a well in the center of the dry ingredients and add the flax egg in a slow stream. 
Add half of the milk and stir until you get an homogenous consistency. 
Add the rest of the milk and the coconut oil and stir until combined. 
Cook over low heat until bubbles form, then flip and cook on other side.
Combine berries and maple syrup on medium heat over the stove. 
Stir occasionally and break down some of the larger berries with a spoon. 
Continue until all berries are slightly soft and a juice begins to form. 
Enjoy the sauce on your pancakes!
