A product of the Padana Plain, Grana Padano PDO is a fine and widely appreciated cheese, a symbol of Italian gastronomic excellence throughout the world. Obtained from semi-skimmed cows’ milk, this semi-fat cheese has a hard, finely granular texture, a white or pale yellow color and is enclosed in a hard, smooth and thick dark yellow rind. It has a fragrant aroma and a characteristic, persistent flavor. It is aged for an average of 16 months. More info here.

ingredients

  • 1 small baguette, sliced into 1/2" rounds
  • 1 1/2 cups Castelvetrano olives, pitted
  • 1/3 cup pistachios
  • 1/4 cup Grana Padano PDO
  • 1 garlic clove, roasted
  • extra virgin olive oil
  • red pepper flakes
  • black pepper

Method

  • Step 1

    Add all of the ingredients of the tapenade into the bowl of a food processor and pulse until everything is finely chopped and roughly the same size. Make sure to not over process into a paste.

  • Step 2

    Place sliced bread on a parchment lined baking tray and toasted lightly for 3-4 minutes.

  • Step 3

    Remove from the oven and top with prepared tapenade, a shaved piece of Grana Padano PDO cheese and coarsely cracked black pepper.
