1 everything bagel, toasted
1 tbsp almond cream cheese (or cream cheese of choice)
1/2 avocado, sliced
1 radish, sliced
handful of microgreens (or greens of choice)
Heat a small skillet over medium heat. Add a pat of butter or a drizzle of olive oil. Once hot, add egg and fry to your liking, about 2-3 minutes, or until white is just set. Season with salt and pepper and set aside while you build the sandwich.
Add cream cheese to both sides, of bagel. Then, to the bottom half add the radish, avocado and egg. Top with greens and the remaining bagel half.
