LOADED HARVEST BOWL with maple dijon dressing

basically a next level, at-home version of sweetgreen’s harvest bowl. i’ve had it for lunch & dinner for the past 3 days

ingredients

  • Farro
  • Kale
  • Roasted sweet potato
  • Crunchy chickpeas
  • Red apple
  • Almonds
  • Goat cheese
  • Maple dijon dressing

Method

  • Step 1

    To make the sweet potato & chickpeas, dice up some sweet potato and season lightly with olive oil, salt & pepper.

  • Step 2

    Drain & rinse a can of chickpeas. Season the same way and add a touch of garlic powder.

  • Step 3

    Bake in a single layer on a prepared baking sheet at 400 degrees for 30 minutes, tossing every 15 minutes.

  • Step 4

    After 30 minutes, take the sweet potato out and bake the chickpeas for an additional 15 minutes or until they’re crispy.

  • Step 5

    During bake time, cook the farro per package instructions and prepare the rest of the add-ins.
