In celebration of Summer fruit and in celebration of Pride Month, I present to you this rainbow fruit salad! It's a bright, refreshing, delightful way to eat fruit, and it's gorgeous to look at! This salad features 11 different fruits: red grapes, strawberries, watermelon, mango, orange, peaches, pineapple, green apple, kiwi, bluberries, blackberries, and raspberries. Feel free to customize it to your preferences! To jazz things up a bit, I added a bright dressing of fresh mint, honey, and lime juice. I also sprinkled some Tajin on top for a little kick :) Have fun with this!

ingredients
- 1 cup red grapes
- 5 strawberries, finely chopped
- 1/4 whole watermelon, finely chopped
- 2 peaches, finely chopped
- 1 orange, finely chopped
- 1 mango, finely chopped
- 1/4 whole pinapple, finely chopped
- 1 green apple, finely chopped
- 2 kiwis, finely chopped
- 1 cup blueberries
- 1 cup blackberries
- 1 cup raspberries
- 8 fresh mint leaves, minced
- 1 tablespoon honey
- 2 limes, juiced
- Tajin, optional, to taste
Method
Step 1
Make the fruit salad: In a very large bowl or casserole dish, combine grapes, strawberries, watermelon, peaches, oranges, pineapple, green apple, kiwi, blueberries, blackberries, and raspberries.
Step 2
Make the dressing: In a medium bowl, combine mint, honey, lime juice, and mix well. Pour over the fruit salad and evenly combine. Sprinkle some Tajin on top if you'd like. Enjoy!
