ingredients
- 2 thin chicken breasts
- Kosher salt
- Black pepper
- 1 tablespoon sesame oil
- 2 garlic cloves, minced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1/2 tablespoon honey
- 1/2 tablespoon sriracha
- 8 sheets Vietnamese rice paper
- 2 cups butter lettuce
- 6 ounces vermicelli noodles, cooked
- 1 cucumber, peeled and sliced lengthwise
- 1/2 cup shredded carrots
- 1/2 cup shredded purple cabbage
- 1/2 red bell pepper, thinly sliced lengthwise
- 2 scallions, thinly sliced
- 2 tablespoons peanuts, roughly chopped
- Handful of mint leaves, torn
- Peanut sauce or dipping sauce of choice
Method
Step 1
Pat chicken breasts dry and season generously with salt and pepper. Heat sesame oil in a large skillet over medium high. Add in the chicken and cook for 3-5 minutes per side, until internal temp reads 165F. Remove the chicken from the pan and set aside.
Step 2
In that same pan, add in minced garlic, soy sauce, vinegar, honey, and sriracha. Cook until reduced and slightly thickened. Add the chicken back into the pan and coat with the sauce. Put chicken & sauce aside for 10 minutes to rest, then cut the chicken into thin strips. Set aside.
Step 3
Set up a workspace to make the spring rolls. Pour water into a plate in a thin layer. Take 4 of the spring roll wrappers and one by one, dip both sides of the wrapper into the water on the plate. Only dip them just enough to get damp on both sides, they will soften as you work with them.
Step 4
Place the 4 dampened wrappers 2 by 2 on the workspace, overlapping slightly on all sides. Fill the wrappers with butter lettuce, a few cooked chicken slices, some vermicelli noodles, a couple slices of cucumber, a bit of shredded carrot, a bit of purple cabbage, a couple slices red bell pepper, and a sprinkling of scallion slices, chopped peanuts, and mint.
Step 5
Roll up the short sides of the giant wrapper to cover part of the filling, then roll one of the long sides over the filling, tucking everything in and rolling until it’s all rolled up. Serve with peanut sauce for dipping. Enjoy!
