This viral recipe is as easy as it is delicious! Medjool dates are such a versatile ingredient, and they really shine when combined with chocolate and peanut butter! Enjoy this as a sweet snack or dessert… you won’t be sorry!

ingredients

  • 12-16 medjool dates
  • 1/4 cup creamy peanut butter
  • Caramel sauce
  • 1/4 cup roasted & salted peanuts, roughly chopped
  • 1 cup dark chocolate chips
  • 1 teaspoon coconut oil
  • Flaky salt

Method

  • Step 1

    Line a baking sheet with parchment paper. Place the medjool dates next to each other in even rows of 4. Put a little oil on the heel of your palm, then smoosh down the dates so they’re flattened.

  • Step 2

    Put the peanut butter in a small microwave-safe dish and microwave it for 30 seconds, so it’s easy to drizzle. Drizzle the peanut butter on top of the smooshed dates, and then spread it so it’s even.

  • Step 3

    Drizzle on some caramel sauce, then the peanuts.

  • Step 4

    In a microwave-safe dish, add in the dark chocolate chips and coconut oil. Microwave for one minute, stopping halfway to stir. Pour the chocolate mixture on top of the date mixture, and carefully spread it out.

  • Step 5

    Place the whole thing into the freezer to set for about 30 minutes. Once solid, sprinkle on flaky salt and break the bark into smaller pieces. Store covered in the fridge for up to a week!
