Brown Butter Puffed Rice Krispie Treats

If you didn’t know, you can turn regular rice into puffed rice (similar to Rice Krispies cereal) with just 2 ingredients - rice and a lot of salt! This technique is often used in India, and the puffed rice is called “Murmura.” To make this, the temperature of the salt needs to be VERY hot, so be careful! It is a very cool and fun cooking experiment to try at home… and the puffed rice can be used for many things (topping for salads & other dishes, or turned into a sweet treat like I did here!)

ingredients
- 2 cups fine-grain salt
- 1 cup U.S.–grown long grain white rice, par-boiled
- 3 tablespoons unsalted butter
- 2 cups mini marshmallows
- Biscoff cookie butter, optional
Method
Step 1
Pour the salt into a large pan over high heat. Allow the salt to get VERY hot, and then pour in the par-boiled rice, starting with just a tablespoon. Working quickly, stir the rice in the hot salt, and it should start puffing up within a few seconds. Use a slotted spoon to remove the puffed rice from the salt, and set it aside. Repeat this process until all your rice is puffed!
Step 2
Add butter to a small nonstick pan on medium heat. Melt the butter and stir it frequently until light brown bits start to form. Allow the butter to brown slightly at the bottom, then remove from heat.
Step 3
In a large nonstick pan, add in the mini marshmallows plus the browned butter. Melt the marshmallows down, then add in the reserved puffed rice. Mix to evenly combine, and you should have something closely resembling a gooey Rice Krispies Treat!
Step 4
Grease a small baking pan and press the puffed rice mixture in to form into a rectangle. Allow to set then cut into squares.
Step 5
Optional: microwave some Biscoff cookie butter in a microwaveable bowl for 30 seconds. Drizzle on top of the puffed rice treat. Enjoy!
