ingredients
- 6 ounces sushi-grade tuna, cut into 1/2-inch cubes
- 1 tablespoon kewpie mayonnaise
- 1 tablespoon sriracha
- 2 scallions, finely sliced
- 1/4 cucumber, diced small
- 2 ripe avocados, halved and pits removed
- 1/2 cup uncooked sushi rice, cooked according to package instructions
- 2 tablespoons soy sauce
- Sesame seeds, for garnish
- Eel sauce, for garnish
Method
Step 1
In a large bowl, combine the tuna cubes, kewpie mayonnaise, and sriracha. Stir to evenly mix. Add in about 3/4 of the sliced scallions, plus the cucumber. Stir to mix.
Step 2
In the halved avocados, fill the holes with the cooked sushi rice, then pour on the soy sauce. Top with the tuna mixture, then garnish with the remaining scallions, the sesame seeds, and eel sauce. Enjoy!
