Mexican rice can seem a little intimidating but truly so easy with the right tips and tricks!
This Cilantro Lime Rice tastes delicious alongside grilled chicken, fish, or with some black beans. Serve it with some of your favorite veggies.
- 1 cup white jasmine rice
- 1 3/ 4 cups vegetable broth
- 2 tablespoons oil
- Pinch of salt & pepper
- 1/ 2 teaspoon garlic powder
- 1-2 limes
- 1 small bunch cilantro
Rinse rice really well and let it dry as much as possible.
Measure out 1 3/4 cups broth.
Add 2 tbsp oil to pan then add rice (rice should be mostly dried, Add rice and cook on high heat constantly moving it around for 4-5 minutes... Don't take your eyes off the rice! Keep moving it around.
Add broth, Bring to a simmer, will take 1 minute. Then cover, bring to lowest heat and cook for 19-22 minutes or until all the liquid is evaporated and rice is perfectly cooked.
Once heat is off, let rice sit for 5 minutes..meanwhile, finely chop the cilantro and zest an entire lime. Add to the rice then mix. Add in garlic powder, lime zest, juice of entire lime, pinch of salt and fresh cracked pepper! Mix again, taste and add more lime juice if desired!
