Matcha Layer Cake

@alenafoodphoto is ahead of the trend with this Green Matcha Cake filled with Greek vanilla yogurt. It's both gorgeous and intriguing.

Ingredients

3 tbsp (50 g) coconut oil, softened.
1-2 tbsp brown sugar.
1 cup of warm milk.
2 eggs.
1 tbsp of matcha powder
1 cup (140g) of flour.
1 and 1/2 cup of boiled water.
Greek vanilla yogurt for filling.

Prep
Put sugar and coconut oil in a mixer bowl and mix well.
One at a time add eggs, matcha powder and warmed milk, mix well on high speed.
Add flour and mix on medium speed until smooth, then slowly add boiled water while mixing. Do not over mix, just let all the ingredients blend together.
Set aside for 10-15 minutes.

Cooking
Heat up a dab of coconut oil on a non stick frying pan (pan should be heated through well)
Fry crepes on medium heat, use spatula to turn over. No need to be adding oil every time, just for the very first crepe. Getting them right does take a bit of a skill, but when you master it - it's forever!

Assembling
Pile crepes on a plate and cool them down in the fridge before assembling the cake.
When cool, simply spread yogurt on each crepe with spatula.
Decorate with berries or anything you like and top with chocolate ganache or syrup of your choice if you'd like.
