Couscous With Dried Figs, Pomegranate And Olives

Sweet & Salty Dried Fig Couscous
Ingredients:
1 cup couscous
1 1/2 cups boiling water
1 handful dried figs
1 cup pitted mixed olives
Seeds of 1 pomegranate
1 cup almonds
1 cup parsley, finely chopped
Olive oil
Salt + pepper
Directions:
In a medium bowl, combine the couscous and boiling water and cover for 5-7 minutes until the couscous has absorbed all the water. Stir well to fluff up and add the rest of the ingredients, a generous drizzle of olive oil and salt and pepper and stir well to combine.
