Vegan/Paleo Sweet Potato Brownies

Serves 6
Ingredients
250g (1 medium) sweet potato, chopped
6 medjool dates, pitted
1 tbsp of coconut oil
4 tbsp of mape syrup
80g of almond flour
20g of coconut flour
4 tbsp of cocoa powder/cacao powder
1 tsp of vanilla extract
Dash of cinnamon
Dash of nutmeg
Method
Preheat the oven at 350F. Cook the sweet potato until very soft, about 20 min.
Blend the sweet potato and the dates (blender or hand mixer work just fine) until you get a creamy texture; add in the vanilla, coconut oil and maple syrup and combine. Set aside.
In a bowl combine the flours, cocoa powder, cinnamon and nutmeg. Slowly incorporate the dry mixture into the wet mixture until everything is combined.
Bake for 40-50 minutes or until a toothpick/fork comes out dry. Enjoy!
