ingredients
- 1 bottle medium-bodied red wine
- 4 sprig thyme
- 2 tsp black peppercorns
- 1 1/2 cup Beef stock
- 2 dried bay leaves
- 1 pound beef tenderloin
- 1 ounce spring onions
- 1 ounce onions
- 1 tabelspoons ginger
- 2 cloves garlic
- 2 tabelspoons grapeseed oil
- 1 tsp sesame oil
- 1 tsp black sesame seeds
- 1 tsp white sesame seeds
- Salt and pepper to taste
Method
Step 1
Combine wine, peppercorns, thyme, chopped onions, stock, bay leaves in a large saucepan.
Step 2
Bring to boil and simmer for 5 minutes. Season with salt.
Step 3
Submerge the beef in the wine mixture.
Step 4
Lower the heat to a gentle simmer.
Step 5
Cook for 15 minutes.
Step 6
To prepare the sauce, chop the spring onions, garlic and transfer to a bowl.
Step 7
Add the grapeseed oil, black and white sesame seeds.
Step 8
Grate the ginger and add it to the mixture. Mix well and season with salt and pepper. Set aside.
