ingredients

  • 2 tabelspoons sunflower oil
  • 2 clove garlic
  • 1 thumb-sized ginger
  • 1 stalk lemongrass
  • 1 pound crabs
  • 1/2 pound medium-sized shrimps
  • 1 cup coconut milk
  • 1 ounce spring onions
  • 2 tabelspoons smoked paprika
  • 2 cups vegetable stock
  • salt and pepper to taste

Method

  • Step 1

    In a large pot, boil water and add salt.

  • Step 2

    Cook the crab for 10 minutes and transfer to a bowl to cool.

  • Step 3

    Add oil to a hot pan, saute minced garlic and lemongrass stalk for 2 minutes.

  • Step 4

    Add the deveined shrimp and crab and saute for 3 minutes.

  • Step 5

    Add the smoked paprika, sliced ginger and vegetable stock.

  • Step 6

    Bring to a boil and reduce to a simmer for 10 minutes.

  • Step 7

    Add the coconut milk and bring to a boil

  • Step 8

    Season with salt and pepper

  • Step 9

    Top with finely chopped spring onions and serve immediately.
