@twaydabae is getting in the Lunar New Year spirit with this traditional Vietnamese recipe, called Thịt Kho trứng. It's a delicious marinated pork belly with a lovely rich sauce, and boiled quail eggs. The quail eggs are a unique twist on the dish that Tway developed to switch things up a bit!

ingredients

  • 6 cloves garlic, minced
  • 1 shallot, minced
  • 4 tablespoons brown sugar, divided
  • 1/2 teaspoon salt
  • 4 tablespoons fish sauce, divided
  • 2 tablespoons soy sauce, divided
  • 1 pound pork belly, cubed 1 inch
  • 10 quail eggs
  • 1/2 tablespoon black pepper
  • 1/4 cup coconut soda
  • bird's eye chilis, sliced, to garnish
  • scallions, sliced, to garnish

Method

  • Step 1

    In a large bowl, add garlic, shallot, brown sugar, a 1/2 teaspoon of salt, fish sauce, and soy sauce to pork belly cubes. Cover and place in the fridge for 30 minutes to marinate.

  • Step 2

    Bring a medium pot of water to boil and carefully drop the quail eggs in. Cook for 4 minutes then remove the quail eggs and place in cold water. Once cooled down, put the quail eggs in a medium container about 50% full of water. Cover the container and shake, which will peel the quail eggs much faster.

  • Step 3

    Once pork belly is done marinating, add 2 tablespoons brown sugar into a large pan and cook over medium heat. Once the sugar is melted, add a tablespoon of water. Add pork belly to the pan and cook for 5 minutes. Then, add two tablespoons of fish sauce, one tablespoon of soy sauce, and a 1/2 tablespoon of black pepper. Cover and let cook for 10 minutes.

  • Step 4

    Once pork mixture is complete, add the cooked and peeled quail eggs and mix. Add coconut soda, cover, and cook for an additional 5 minutes. Garnish with bird's eye chilis and scallions. Enjoy with rice!
