As a nearly lifelong vegetarian, I’ve had a longstanding love affair with tofu. Sometimes tofu gets a bad rap for being texturally weird or flavorless…but let me assure you, with the right recipe, this is never the case! Use silken tofu to make creamy pies and tarts, or crisp them up in the oven to top your salads and rice bowls. Tofu is a great in stir fries and noodle dishes as well.
