Homemade Peanut Butter
ingredients
- 1 pound roasted shelled unsalted peanuts
- 2 tablespoons honey, optional
- 1/2 teaspoon salt, optional
Fresh Jam
ingredients
- 1 pound mixed berries
- 1/2 cup granulated sugar
- 1 lemon, juiced
- pinch of salt
Honey Rum Grilled Banana
ingredients
- 1 banana
- 2 tablespoons rum
- 2 tablespoons honey
- 1 tablespoon honey
To Assmeble

- sourdough bread
- cacao nibs
Method
Step 1
Start by making the homemade peanut butter. Place the peanuts in a food processor. Process until very smooth about 10 min. Optional: add the salt and honey and process until incorporated.
Step 2
Next, make the jam. Place the fruit, sugar, lemon, and salt in a saucepan over medium heat and mash the fruit with a potato masher or large fork into a chunky texture.
Step 3
Bring the mixture up to a boil. Cook for about 20 min stirring frequently.
Step 4
Turn off the heat and transfer the jam into glass jars. Store it in the refrigerator for up to 3 weeks.
Step 5
For the Honey Rum Banana, combine rum, honey and cinnamon; set aside. Cut bananas in half lengthwise, leaving the peel on.
Step 6
Place bananas cut side down on grill. Grill over medium heat for 3 minutes. Turn and brush with honey mixture. Grill until tender, 5-6 minutes.
Step 7
To assemble sandwich, spread peanut butter on one piece of bread and spread homemade jam on the other.
Step 8
Add the peeled banana on the slice of sourdough that has peanut butter then sprinkle on cacao nibs. Place the other slice of bread with jam over top. Grill in a buttered pan for 3-4 min per side depending on heat.
Step 9
Cut sandwich in half and enjoy!
