Chickpea Za'atar and Roasted Veggie Bowl

This simple and delicious veggie and chickpea bowl is perfect for meal prepping and weeknight dinners (or weekday lunches!). Use lots of colorful veggies that are sure to perk up your day and roast until golden perfection, then round out the bowl with za'atar spiced chickpeas and a scoop of yogurt.

ingredients

  • 5 asparagus
  • 1 sweet potato
  • 1 zucchini
  • 1 can chickpeas
  • 2 tablespoons plain yogurt (dairy-free if necessary)
  • 2 teaspoons za'atar
  • 2 tablespoons olive oil
  • pinch of sea salt
  • pinch of cracked black pepper
  • 1/2 lemon

Method

  • Step 1

    Line up a baking tray with parchment paper and preheat oven to high temp (425F)

  • Step 2

    Wash, pat dry, then chop up produce.

  • Step 3

    Arrange produce onto prepared baking tray. Drizzle with olive oil and sprinkle some salt & pepper and bake on high until start to brown (greens will cook faster than potato).

  • Step 4

    While veggies are roasting, drain chickpea can and transfer to a bowl. Squeeze half a lemon onto chickpeas and season with za'atar

  • Step 5

    Arrange roasted veggies in bowl along with chickpeas and plain yogurt. Sprinkle more za'atar and enjoy!
