ingredients

  • 1 cup fresh or frozen blueberries
  • 1 teasopon tapioca starch
  • 1/2 chopped almonds
  • 1 cup rolled oats
  • 2 tabelspoons shredded coconut
  • 1/2 cups (1 1/2 sticks) melted coconut oil
  • 1 cup fresh coconut flour
  • 1/2 cup coconut sugar
  • 1/2 teasopon baking soda
  • 2 tabelspoons almond butter
  • 1 pinch cardamom
  • 1 pinch cinnamon
  • 1 pinch salt

Method

  • Step 1

    Mix blueberries + tapioca starch. Place together in a bowl, let sit for a few mins.

  • Step 2

    In another bowl, mix almonds, flour, oats, sugar, oil, baking soda, salt and spices until incorporated and sticky. If seems a little dry, mix in additional 1-2 tbsp oil.

  • Step 3

    Spread onto a lightly greased parchment paper lined baking sheet (create handles to pull out of tray more easily later), minus 1/2 c reserve oat mixture for final bake, and bake at 350 F for 8 mins.

  • Step 4

    Remove from oven, spread 2 tbsp almond butter onto bake (messy is ok - u can also pipe it or melt it in the microwave beforehand for smoother more even spread), throw berries on top followed by remaining oat mixture and continue bake for additional 10-15 mins until brown.
