UKRAINIAN "VARENIKI" WITH COTTAGE CHEESE
"Here is one of my favorite ukrainian dish. Tender filling with cottage cheese and melting-in-your-mouth dough. You could make the dish sweet, but I'm at the salty side."

ingredients

for the dough

  • 280 gram flour
  • 180 gram boiling water
  • 2 tablespoons oil
  • 1/2 teaspoons salt

  • 400 gram cottage cheese
  • 1 egg
  • 2 egg yolks
  • 1/2 teaspoons salt

Method

  • Step 1

    Mix flour and salt, pour in the hot water, add oil and start making the dough with a spoon.

  • Step 2

    Leave the dough for 15 minutes.

  • Step 3

    While the dough is resting we will make the filing. Mix all the filing ingredients together.

  • Step 4

    Roll out the dough until it's 2 mm.

  • Step 5

    Cut the dough into round shape pieces and put 1 tbsp of filing on each of them.

  • Step 6

    Close the edges, form the vareniki.

  • Step 7

    You could freeze them or cook straight away. Put vareniki into salted boiling water and cook for 5 minutes. Serve with a bit of butter and sour cream. Enjoy !
