Lately I’ve been very deliberate about eating for my skin (quarantine breakouts) and making sure what goes in my body aids in detoxing and gut health. ingredients

  • 1 bunch kale, chopped
  • 1 tablespoons extra virgin olive oil
  • 1/2 lemon, juiced
  • Dash of salt
  • 1 avocado, pitted and thinly sliced
  • 4 celery stalks, small dice
  • 4 cooked beets, quartered and sliced
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1/4 cup feta
  • 3 tablespoons Annie's Organic Goddess Dressing

Method

  • Step 1

    Prepare the fresh vegetables by rinsing and washing. Drain and rinse the can of chickpeas. Set aside.

  • Step 2

    Chop the kale and massage with EVOO, lemon, and salt. Set aside

  • Step 3

    Slice, dice, and chop avocado, celery, and beets.

  • Step 4

    In a large bowl combine the kale, chickpeas, avocado, celery, beets, and chickpeas. Add Annie’s Goddess Dressing and feta. Toss and serve.
