ingredients
- 2 tablespoons grape seed oil
- 1 medium onion, finely chopped
- 1 medium bell pepper, finely chopped
- 1 8 ounce package tempeh, cut into ½ inch cubes
- 1 zucchini, sliced
- 1 tablespoon chili garlic sauce
- 1 garlic clove, minced
- 1/2 teaspoon sea salt
- 1/2 teaspoon five spice powder, optional*
- 1/2 teaspoon ginger, freshly minced
- 8 oz cooked udon noodles, drained
- 1/2 bottle Annie's Organic Shiitake Sesame Vinaigrette
Method
Step 1
In a large skillet, heat grape seed oil over low heat.
Step 2
Add onion and pepper. Increase heat to medium. Cook until slightly softened.
Step 3
Add tempeh, zucchini, chili garlic sauce, garlic, salt and five spice, if using. Cook for another few minutes.
Step 4
Add Annie’s Organic Shiitake Sesame Vinaigrette. Simmer over low heat for about 10 minutes, stirring occasionally.
Step 5
Serve over udon noodles.
