Rainbow Veggie Udon Noodle Salad with Almond Sauce Dressing

Ingredients

For the dressing

1 tbl almond butter

2 tsp rice wine vinegar

2 tsp sesame oil

2 tsp soy sauce

1 tsp honey

1 tsp sriracha - or more to taste

1 garlic clove, minced

1/2 inch ginger root, grated

juice of 1/2 lime

 

For the noodle salad

1 cup cooked udon noodles

1/2 cup sliced red cabbage

1/2 cup zucchini noodles

1/2 cup sweet potato noodles

1/2 red bell pepper, sliced

 

For garnish

chopped almonds

cilantro

scallions

 

Directions

In a wide-mouth mason jar, combine all of the dressing ingredients. Shake or stir with chopsticks all of the ingredients together until fully combined.

 

Add the udon noodles, red cabbage, zucchini noodles, sweet potato noodles, and sliced bell pepper. Stir with chopsticks to combine. 

 

When ready to serve, pour noodle salad into a bowl. Garnish with chopped almonds, cilantro, and scallions.
