These delicious vegan tacos are packed with spicy and sweet vegan taco filling, crunchy pickled red onions, spring onions, cilantro, and creamy vegan queso. The ground "beef" is flavored with onion, chili, and cayenne powder, nutritional yeast, soy sauce, and sweetened with maple syrup. ingredients
- 2 tablespoons coconut oil
- 12 ounces plant-based vegan ground meat substitute
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1 tablespoon chili powder
- 1/4 teaspoon cayenne pepper
- 1 tablespoon nutritional yeast
- 2 tablespoons tomato paste
- 2 tablespoons soy sauce
- 2 teaspoons maple syrup
- pinch of salt
- 8 Corn tortillas
- Vegan Queso
- 2 Spring onions
- 1/4 cup cilantro
- 1 Lime
- Pickled Onions, recipe below
For Pickled Onions
Method
Step 1
Thinly slice a red onion and add to clean jar. Fill with vinegar (traditional or apple cider vinegar) and a generous pinch of salt. Stir and let sit for at least 1 hour
For Tacos
Step 1
In a large skillet, combine the coconut oil and the vegan ground "beef." Cook on medium heat for 3 to 5 minutes, or until it starts to brown. Then add spices: onion powder, garlic powder, cumin, chili powder, cayenne pepper, nutritional yeast, tomato paste, soy sauce, maple syrup and pinch of sea salt. Mix together to combine until warmed and lightly browned. (5-10 mins)
Step 2
Scoop the taco meat into corn tortillas and lather with spoonfuls of queso. Sprinkle with spring onions, cilantro, pickled onions, and a squeeze of lime.
