- 4 sweet potatoes
- 2 tablespoons coconut oil
- 1 garlic clove, minced
- 3 tablespoons water
- 4 eggs
- avocado, hemp hearts, chopped wheatgrass for topping
Spiralize your sweet potato with the smallest noodle attachment.
Place a large pan over medium-high heat and melt the coconut oil. Add the garlic and cook until fragrant. Place the spiralized sweet potato in the pan and cook for 3 minutes, tossing frequently. Add the water and continue to cook, tossing frequently until the sweet potato is cooked but still has a crunchy, another 3 minutes or so.
Divide your cooked sweet potato noodles into small Ballarini pans, leaving a small second in the middle. Crack an egg into the center divots and cook over medium heat for about 3 minutes. Transfer the pan to the oven and broil it for another 2 - 3 minutes until the egg white is no longer translucent.Top with chopped wheat grass, hemp hearts, avocado, hot sauce, whatever you like!
